[From The Kitchen]

Serves: 4

"Here's a great way to surreptitiously get everyone's day kicked off right with filling whole grains and fruit antioxidants. Breakfast foods provide a lot of opportunity for confusion over "wheat" vs. "whole wheat" so always remember you want the "whole" thing! Add nuts and/or substitute chopped nectarines for the grapes, if you like. And if you prefer your syrup warm, gently heat the thinned fruit spread in a small pot on the stove before serving."

Ingredients:
1 1/3 cups 365 Everyday Value® Organic 100% Whole Wheat Buttermilk Pancake & Waffle Mix
3/4 cup plus 3 tablespoons water, divided
1 tablespoon expeller-pressed canola oil
1 cup seedless red grapes, finely chopped
Cooking spray
1/4 cup 100% Fruit Spread, such as Wild Blueberry or Black Cherry

Method:
In a large bowl, stir together pancake mix, 3/4 cup plus 1 tablespoon water and oil until just combined; fold in grapes. Heat a large skillet over medium heat. Spray with cooking spray and cook pancakes in batches, using more cooking spray as needed. Use about 1/4 cup of the batter to make each pancake and cook, flipping once, until cooked through and deep golden brown, about 5 minutes; transfer to a plate. In a small bowl, stir together fruit spread with remaining 2 tablespoons water and spoon over hot pancakes.

Per serving (about 5oz/155g-wt.): 230 calories (35 from fat), 4g total fat, 0g saturated fat, 0mg cholesterol, 310mg sodium, 44g total carbohydrate (5g dietary fiber, 15g sugar), 5g protein

[From The Smart]
"Sometimes God gives you folks; sometimes, he takes them away."

During college, I've made some goods friends, one of which I'd call a best friend. Now, my general rule is to keep this blog at arms length when it comes to my personal life, but that rule is clashing with this entry. [From The Smart] entries are supposed to be about my life, and this has been on my mind for the past week, but I refuse to get into specifics.

My best friend and I have been speaking to each other everyday since summer started, but for the past few days, I have been unable to get in touch with her. Calls have turned up nothing, and the friends the two of us share haven't heard from her either. I hate to say it (because it makes me feel egotistical) but I may be the best friend she has, which makes me worry worse. What kind of best friend am I when I can't be there for whatever she's going through? I'm not her father, and I'm not her boyfriend; I don't need constant updates about her current location and status. I just want to know she's okay.

[From The Smart]
Food is going to come.

On the "blog dashboard", some may have noticed that [From The Internet] has been removed, and replaced it with [From The Kitchen]. I found the links gadget under Design -> Page Elements and decided it would be easier and make more sense to add the links I've posted to the gadget instead of making a page for it. Up to ten pages can be created, I just prefer to have five. Anyways, this is why the [From The Internet] page is gone.

That's one reason, because I found a new way to post links. The other reason is because I wanted to give food (and cooking) a try, and discuss it on my blog. My plan is to find some good recipes on the Whole Foods Market website and then rate the dish based on my opinion of it the next day. The ratings won't appear until later, but I'll be posting the recipes ahead of time, and the Whole Foods Market ensures that the dishes will be healthy (which takes the effort out of looking for these type of recipes somewhere else).

Serves: 2 to 4

"Make this salad with fresh corn on the cob or frozen and thawed corn. Even better, remove the kernels from leftover grilled corn to make this quintessential summer picnic salad."

Ingredients:
2 cups fresh corn kernels
1 large tomato, cut into wedges
1/2 cup sliced red onion
1/2 cup chopped green bell pepper
4 to 6 large basil leaves, cut into thin strips
2 tablespoons vinaigrette or Italian dressing

Optional: mixed baby greens

Method:
Toss together corn, tomato, onion, bell pepper, basil, and vinaigrette in a medium bowl. Spoon onto a bed of baby greens for serving.

Nutrition:
Per serving (392g-wt.): 160 calories (25 from fat), 2.5g total fat, 0g saturated fat, 7g protein, 30g total carbohydrate (7g dietary fiber, 8g sugar), 0mg cholesterol, 560mg sodium

It's been a while since I post something not related to movies or music. I may as well point out the changes I've made to the blog:
  • The blog name has changed from "Kidd Radyo's Blogg" to "Between Here And There". I think it better describes the aim of the blog (see profile).
  • I started removing the original tags to the posts and adding new ones. I think this'll better organize everything, with more tags now than I had before.
  • I've moved the Twitter and the followers section to the bottom of the blog. I don't have a reason behind doing that though.
  • Lastly, I've gotten rid of the posting schedule I had before. Now posts are at random and about random things.
Don't worry though. The blog may have changed, but I'm still the same.
